You want to eat healthier but still, use the pellet smoker?
Here is a recipe that every smoker will love and their healthy eaters will crave.
Mushroom Mini Burgers
It is a little bit meat and a little mushroom.
Total Meal Prep Time 45 minutes to include 15 minutes of prep time too.
INGREDIENTS
1 lb. ground beef
1 tbsp. Worcestershire sauce
1 tbsp. yellow mustard
2 cloves garlic, minced
kosher salt
Freshly ground black pepper
16 oz. Your Favorite mushrooms Portabellas that are cubed might be nice.
1 tbsp. extra-virgin olive oil
6 slices cheddar, quartered
Sliced cherry tomato, for garnish
Sliced gherkins, for garnish
First, preheat the pellet grill to 350.
Preparation
In a bowl combine the ground beef, Worcestershire sauce, yellow mustard, and garlic. Combine all ingredients mixing by hand. Add salt and pepper. Then form into small patties. These should match the size of your mushroom’s cubes or pieces.
The idea is to have mini burgers at the end so go for size no larger than a half dollar in circumference.
In a larger bowl toss the mushrooms with the olive oil and season with a little salt. Remember to go lite you will still have the salty taste of the meat and cheese yet to come.
Add the mini burgers to the mushrooms stem side up towards the meat.
Place them on the top rack and turn up the smoke for 20 minutes. We want good smoke and indirect heat here.
Place the mushroom mini burgers on the grill and add the cheese. Continue until melted.
Transfer to a serving plate once the cheese is melted and serve hot.
The mushroom replaces your need for bread and makes these a masterful meaty delight.
