White Sauce 2 Cheese Mushroom Pizza
This is an amazing cheese pizza that has a great Mushroom taste. If you have a Ooni Wood Fired Pizza Grill you can do the pre work in about 15 minutes and cook this amazing Pizza in about 2 minutes time. If you are cooking in a traditional oven your preparation time remains the same, but the cook time will increase to about 12-15 minutes.

INGREDIENTS:
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 3 cloves garlic, minced
- 16 ounces cremini mushrooms, thinly sliced
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Kosher salt and freshly ground black pepper, to taste
- 1/4 cup yellow cornmeal
- 1 (13.8-ounce can) refrigerated classic pizza crust
- 8 (1-ounce slices) Wisconsin fresh mozzarella cheese
- 1 cup Wisconsin ricotta cheese
Preparation:
If you are using the Ooni you do not need to start preheating yet. They take far less time to get to temperature than your average stovetop.
If you are using an oven it is time to preheat your oven to 475 degrees.
While it preheats take a medium saucepan and melt your butter over medium heat. Then add the garlic and cook until it clarifies and melts for about 1-2 minutes.
Next stir in mushrooms, thyme and oregano. Cook, stirring occasionally, until mushrooms are tender and browned, about 5-6 minutes; season with salt and pepper, to taste.
Sprinkle your cornmeal onto your rolling surface to prepare your dough. Go for about a 12 inch diameter so it will feed 2 people well and fit into your Ooni if you are lucky enough to have one.
Now is time to place your toppings. Top the Pizza with your Mozzarella and portions of the Ricotta Cheese and the Mushrooms.
The last step is to cook the crust and sauce, while melting all of that amazing cheese. Again in the Ooni expect a cook time of about 2 minutes and in your traditional oven at the lower temperature of 475 expect 15 minutes for the average cook time. Just keep an eye out for the color of the crust.
